Saute onions in oil.
Add sliced mushrooms.
Then halve the recommended amount of pataks korma paste and cook for a minute or two.
Add tinned tomatoes, tinned chickpeas and cooked potatoes or almost cooked sweet potatoes.
Cook for 20 minutes.

Add creamed coconut - in a sachet or from a block, shortly before serving for a nice creamy texture.

Other veg that you could add after the coconut - precooked - cauliflower florets, squash, courgettes.

I make this for myself and my family as I don't eat dairy and don't like spicy food. We love it. Should be suitable for littlies as plenty of fat and protein.

I usually cook some frozen peas in among the rice.

This is a very well used recipe in my house (hope image is showing). I quadruple the ingredients except for the spice paste where i use 2 tbsps, I think with a whole tin of coconut milk it isn't spicy at all, just nice and creamy. You could substitute for the milder korma paste though. I also use white rice rather than black rice.

Both sound nice. Thank you I'll try them.
