I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

MsJuniper if theres no milk in the ingredients they should be vegan :) it's pretty easy these days because allergens are listed in bold. Watch out for whey powder - that's milk. It will sometimes say milk in bold after or in brackets but not always. However whey will always be in bold

Some things will say 'may contain milk'. You should read this exactly the same as how most products 'may contain nuts'. It means they handle milk in the factory, and they have to state this due to allergies. So unless you are allergic, don't worry :)

Thanks twenty! That's what I thought but friend who is high vegan queen extraordinaire said she wouldn't have them so I left them sadly on the shelf. Next time I will go for it.

Some people won't eat things that aren't labelled explicitly vegan, and that's their choice of course... but the dairy industry is not kept afloat by tiny traces worming their way into otherwise vegan products through potential cross contamination on factory lines! Each to their own but for me intention wins over worrying about possibility of traces :)

Do any of you have any low carb recipes (easy ones)? Must not contain quinoa or tofu as I can't stand them. They appear in so many vegan recipes but I've managed for numerous years without them. I've tried different ways of cooking tofu and quinoa but nope, really don't like either.

Poppy i usually go for a good avocado salad if I'm skipping carbs, it's a really filling fruit, great with spinach, basil, cucumber, tomato for a quick lunch. Drizzled with olive oil and a bit of black pepper mmm!

POPPY I often use cauliflower rice and/or spaghetti squash in place of carbs

I'm on a fast day so it was asparagus and radishes dipped in Bitchin' Sauce for lunch, and a mahoosive avocado salad for dinner

Starving though - well looking forward to my lentil and sweet potato soup and chickpea and carrot tagine tomorrow (got both out of the freezer)

Morning all!

Loving the vegan meals everyone is posting!

Our tofu and lentils were delicious last night. I sauteed onions, garlic, celery and leftover broccoli, added cold cooked green lentils and chopped fresh tomatoes, the juice of a lemon and loads of chopped parsley. DH went mad over it and has asked for this to be made again and again and again.

I also noticed that Aldi sage and onion stuffing seems to be vegan, so on Sunday I am planning to add grated onion, grated carrot, top with passata and cook like a 'meatloaf'. It might work.(It works in my head at least!).

The Middle Eastern Vegetarian cookbook has just been orderedfrom Amazon- thanks for the recommendation!

peanut cookie recipe but i used SR Flour instead of Oat flour & baking soda - it was fine. They were yummy Smile

I'm doing @thetowpath rec tonight - peanut/sesame/aubergine curry. Will prob make daal and indian salad and serve with some kind of flat breads.

Dos are having tofu hotdogs - I wonder if they will notice?!

Hi Faux I used green lentils that I soaked myself as we had a big bag I had forgotten all about. But I have used the tinned green lentils for a curried lentil soup I do before and the texture is the same IMO.

Tonight we are out at a function, and had to pre-order our meals weeks ago. So it will be chicken stuffed with spinach tonight for me and steak for DH, sadly! (I decided not to give the restaurant a nervous breakdown by changing my order!).

I'd be interested in how the tofu hotdogs go... :)

MsJuniper The dark chocolate rice cakes are vegan (and I looovve them).

Thursday and Friday are our Rushing After-school Club Finish Work Late nights so last night was pasta with Sacla olive stir-in sauce and tonight will be avocado on toast (and wine after DC in bed)

I've made a baked vegan cheesecake for pudding tonight, quite excited! It looks good. Going to have vegan quorn and lentil chilli and tacos for main with sourcream and chive dip and cheese for the DC.
Mushroom and onion quesadilla for lunch was lovely.

Oh Alice i do stuffing (most mixes are vegan, paxo sage and onion one is) with fried grated carrot, leek and greens mixed through and baked in the oven. It's lovely! Used to add nuts but we all agreed it's much nicer without. The DC don't complain about the lack of meat in our roast dinners when we have that.

Tomorrow I am doing veggie chilli and baked potatoes with guacamole etc.

I'm feeling much more confident a week or so in - veganing is actually easier than I thought it would be Grin the kids are a bit tricky but I'm just going to do my best with them and try not worry too much about a bit of fish or dairy...it's all a step in the right direction anyway!

DH is really into it - he watched a film about how vegan diets stop heart disease and all sorts of things like that so he's feeling really good about the health aspect of it all.

Thanks kiki. Will definitely try spaghetti squash. Probably not the cauliflower rice as cauliflower causes major stomach pain, as does broccoli. And cucumber. Amazing how I've survived on a vegetarian and then vegan diet for 30 years Grin.

Faux I am finding veganing (I love that word!) quite easy too- I did eat the set menu last night and enjoyed it, but both DH and I mentioned we were looking forward to going back today to vegan. We feel much better, and things in the - ahem- digestive way are very encouraging also.

Not sure what we will do- but the Linda McCartney sausage hotpot idea a few people have mentioned on the thread might be perfect. :)

Fast day tomorrow so shit tons of cucumber and bitchin sauce for lunch and then ordering in tofu larb from the local Thai - it rocks my world, and it looks like it would be pretty easy so I really ought to learn to make it myself

I have some v ripe bananas and a ripe avocado to do some vegan baking with the kids this weekend

Great thread! I am veggie, DH and DCs are carnivores but happy to eat whatever I cook. I have been trying to cook more vegan meals recently (also trying to stealth-veganise all of us one step at a time!) so this thread has been great!
One of my favourite store-cupboard recipes and my favourite dish by far at the moment is this one:
Slice & fry onion until soft
Add spices - I usually use cumin,lots of turmeric, black pepper, ginger, cinamon and lots of chilli powder if I'm only cooking for myself
Add peanut butter (last time I used crunchy peanut butter wih quite big pieces of nuts in it, it was lovely!)
Add coconut milk
Mix until it's a paste
Add boiling water to make a sauce
Add chickpeas & any veg tou fancy (I have used carrots, peppers and courgetter in the past)
Boil until veg is tender
Serve with whatever grains you fancy.
It's bloody lovely!

I'm not a vegan but I saw a crazy recipe today for chocolate mouse where you substitute the whipped egg whites for the brine from a tin of chick peas that was whipped - apparently it really does whip up! The final thing looked exactly like normal chocolate mousse!

@deliveredbykiki the pastry was gorgeous, difficult to handled but actually the best pastry I've ever made (used cold coconut oil in place of butter) the filling needed more lemon and was a little heavy, needed more of the cream cheese (as per the recipe!) I'll definitely try it again.

sweets I've done it and served to omnivores and it was brilliant! I'm now using aquafaba as my binding ingredient in baking too

Yet to try it as meringue though
