I'm new at veganing and I'd like ideas and somewhere to record my meals... please let me know what vegan food is on the menu in your house tonight (or eating out too actually) I am really interested 😊

So tonight I am making veggie chilli out of sweet potato/courgette/peppers/carrot/baby corn/kidney beans etc served with guacamole and tortilla chips. I have homemade vegan brownies for dessert.

Don't think I will miss meat/dairy at all Grin

Hope everyone is fine.

The talk about salad's lasagne reminded me that yesterday I saw in the Sainsbos chiller cabinet flat and thin sweet potato 'lasagne' sheets so I am now thinking about doing something with those.....

The stir fry last night was really good. I had a late day in the end so got just a stir through spicy szhechuan sauce. I added a bit of extra dried chilli flakes for DH and it was really pretty tasty.

I found this site also- it is the Physicians Committee for Responsible Medicine and they promote veganism for health and ethics but also do alot of work against the use of animals in science. Really good website, and some recipes too. Loads of evidence-based health information about veganism.

Leek and Potato soup with toasted ciabatta planned for dinner.

DD doesn't like any of the plant milks and doesn't want to stop eating meat/dairy so I've agreed to keep in cheddar and milk for her and sometimes cook fish and she can have free choice at school/in restaurants. She's 12, i'm not going to push it. Dos are having chinese salmon and rice for dinner.

I decided in the end to just do a three bean mexican chilli with rice for today.

Faux do you use a plant milk in your soup? I have a great chowder recipe that uses a little bit of cream, but am thinking that a pureed potato might work just as well. DH is very open to vegan, but very anti plan-based milks.

Last night had a sort of Pho, which was really lovely and easy. Stock with lemon grass, chilli, garlic, ginger and stock, bring to boil and then simmer for about 30 mins and then sieve liquid, add coconut milk, simmer for about another 10 mins. Add tofu and whichever veg you fancy and then cook noodles separately, add to other ingredients and then cop with beansprouts and coriander. Was lovely. Tonight I am having mushrooms and polenta.

For lunch I often have the following:

Pan-fry some mustard seeds/cumin seeds
Add 1 drained tin of chickpeas
Add 1/2 tin of chopped tomatoes
Add cumin/paprika/cayenne to taste, plus half a veg stock cube
Add a little water and bring to boil, then simmer
Add a load of spinach/watercress to wilt into it
Add a little lemon juice and season to taste.

Takes about 15 min to make and is bloody lovely Grin I'm sure it would go well with tortilla wraps too!

Alive - I often use coconut milk in soups normally the KoKo brand. For curries I use tinned coconut milk but just to add a bit of creaminess and think it out coconut milk from the carton works well. I really doubt your H would be able to taste it in a well seasoned soup, however soya milk he might.

FauxFox interestingly I went the other way - stopped eating animal products out but I buy them in for the family because at least then I know I am buying as humane as possible (restaurants aren't going to spend the fortune I do on grass fed anything!), it's hard though cos my DD basically only eats chickpeas, chicken and cheese (slight exaggeration but not much) and DS loves sausages but we eat mainly vegan at home (I have extra Veg or fish when they have meat and I don't cook with dairy or eggs etc) so am trying to educated them to at least make good choices about what and where they buy from.

Tonight I'm making slow cooked coconut curry with chickpeas and vegan quorn. It's another slow cooker jobby because I do a kind of split shift in my job and don't get back until 9 so this means I can just eat straight away.

Lasagne recipe as requested (it was a bit made up, so this is approx)

Saucepan: Olive oil, red onions, diced aubergine (3 large), bit of wine, some leftover black lentil bol from yesterday, 2 tins toms, puree, soaked red lentils, splosh of water and stock to taste. Simmer for a bit, then add some chopped flat parsley and basil.

Frying pan: Sweat some shaved garlic, add lots of chopped curly kale. Wilt it all. Blitz some soaked cashews with a bit of salt and a teaspoon of tahini. Stir it all together and reduce until it's thicker.

Layer aubergine mix / kale mix / pasta / aub / kale / pasta and finish with aub on top.

Oven for 40m

Like I said - made up and I was in a total rush. I guess if you eat fake cheese you could grate some on top which would look prettier, but it's not something I have ever tried.

It was delicious.

Tonight we had roast butternut squash risotto with peas, onion and sage. It's a favourite here.

Tomorrow is mixed bean chilli.

Diana Henry has a wonderful book called Simple. Not all of the recipes are vegan, but many are and they are delicious and super easy to make.

DH made farro with aubergine, carrot, chives and lemon for tea. DCs oddly adore farro! They had theirs plain with some carrot sticks and cashew nuts on the side.

Morning all.

Tonight I am going to marinate tofu in red pepper and cashew nut pesto then bake in the oven. We will have this with a green lentil, tomato, celery and onion salad with a lemon garlic dressing. I found an old pack of green lentils at the back of the larder and started with that. I have also bought a few books off amazon. DS has spagetti and meatballs with garlic bread etc on the school lunch agenda and he will not like tofu or lentils so I am being lazy and giving him (dairy) cheese sandwiches and hummus and carrot sticks. He will think Christmas has come again!

L: Bowl of baby spinach and kale with baby toms, grated raw sweet pot, cashews, sprouted seeds, avo chunks. Was HUGE but I was starving.
D: Haven't got that far yet...

Just wanted to come and recommend that you all buy The Middle Eastern Vegetarian Cookbook - I'm obsessed, it's amazing. It's not all vegan but most is, and alternative options for many of the dairy things.

Another 1 minute wonder for me.

Sausage stew.

Frozen leeks, cabbage, onions, carrots, mixed mushrooms and Linda maccartney sasauges poured into the slow cooker with some green lentils, boiling water, bisto and tomato purée, left to cook on low all day.

I had a PB wrap for breakfast, Laura's Idea salad for lunch and 3 bean chilli for dinner.

Nearly bought those Kallo choc rice cakes which I love but they don't specify vegan. No milk in ingredients but they are marked vegetarian. My friend thought only 75%+ dark chocolate could be vegan. If anyone knows otherwise please tell me!

I had a lovely Tofu paneer curry from tesco and added sauted onions, celery and red pepper to it and served with brown rice. It was bloody lovely but even with the extra veg not enough for two people.
