It's DH's turn to choose a location and so far two options he's suggested don't quite work. So onto option 3 - Dublin.

What do you recommend doing there? We enjoy walking, museums, watching the world go by, water. Just the two of us. Is there a good location to stay in terms of restaurants and places to visit/anywhere to avoid?

Try and get a hotel on the South side of the river, there are loads and loads of museums and great places to eat - it is a capital city!
the public transport is great, the Luas (tram) is great and the buses are plentiful too.
so much to see and do there, a huge amount of history - the gaol is very sobering.
and obviously the river Liffey runs right through the city and there are also canals too and plenty of coastal areas to explore and enjoy too
