It depends on your interests but would recommend:

culture
the science and industry museum
the John rylands library
the Manchester art gallery

fun:
junkyard golf
Roxy ballroom
cricket batting (in the city centre)
Lane 7 bowling
flight club (darts)

food:
Ramona
Rudys (pizza)
Sugo pasta
Almost famous burgers or Solita
Turtle Bay

shopping
Afflecks palace
the arndale
The Trafford centre (a tram ride from the city centre). if you go there’s also skiing nearby and indoor skydiving so could make a day of it.

Misc:
Go for a wander around Ancoats - it’s a redeveloped part of the city and really nice.
Heaton Park if you want to get out the city a bit.

Escape Hunt has some excellent themed escape rooms suitable for 2 players.
Treetop Adventure Golf is great fun! The pizza there is really good value for money.
You can get special street art walking tours which are interesting and engaging.

Also the imperial war museum of the north and Lowry Centre at Salford Quays (also home to the BBC and Blue Peter garden).
Manchester museum
Get the tram to Bury if there's steam train services on the East Lancs railway.
Royal Exchange, Palace Theatre and Manchester Opera House are the main theatres, as well as The Lowry so they might have something on.
There's free walking tours.
You could go to Chester or Liverpool on the train for the day.

Theres tonnes of music venues - check what’s on at the AO arena, Manchester central, Albert Hall, Academy, Ritz 😊
