Are you planning to go M6 - A14 or M62-A1 route? It might depend which part of Norfolk you're heading to as to which is best.

Heading to Haven, don't mind which way if there is a nice place to stop a while

I don't think that rest stops are very common in the UK - you'll find motorway service stations every now and again, but nothing like a rest stop.

I mean a nice town or theme park with a hotel we can stop at night before break the journey up.

For that sort of journey we usually leave early and stop somewhere for lunch and a long run around. Somewhere like Belton Park is probably about halfway for you - it has a good adventure playground (hopefully all now reopened post-Covid, the best bits were still closed last year), eating options etc. Not massively out of your way if you're doing the A1/A17 route. That's assuming you're going to Caister/Yarmouth.

Depending on which route you take......Drayton Manor theme park, Yorkshire Wildlife Park, Sherwood Pines, Clumber Park, Cambridge
