I love Jersey. Go each year with my 8 year old daughter. We stay at the Merton hotel though, half board, as it does great meals and has a super pool with slide etc and kids club.
I'd strongly recommend staying near St Helier as most events happen around there and there's Waterworld there, which has several different heated pools, wave machines, 3 slides and is good value for money. We went on quite a few coach trips from St Helier to other parts of the island. The war tunnels and Elizabeth island are worth a visit.
We thought we might try camping one year. There's a place with tents already set up at www.jerseycamping.com which looks reasonably priced. They're not open until April next year though.
Sorry can't help more..there's a great theatre there, worth checking what's on before you go..we saw "Joseph " there a few years ago.

We live in Jersey - loads of lovely hotels, there are some nice apartments too - eg St Peter's Country Apartments. The I Love Jersey website is v good. Things to do - Beaches, surfing, rock pool exploring. If the weather is good the beaches are the best place to be. Try not to stay in St Helier, nicer outside. Explorer buses are good value can take you round the island cheaply. Why not whizz over to one of the other islands eg Guernsey by plane, or ferry. The Durrell zoo is good fun and has some great gorillas. Also if you have a car everywhere is near the sea really.
