I think a lot of UK holiday areas are pretty booked up right now. To be honest I'd just look at what is actually available rather than specific types of accommodation.

Snaptrip is good for last minute stuff

Hoseasons, we stay in Devon or Cornwall 2-3 tomes a year and always use them and have a private hot tub. We just got back from towan valley- Porthtowan which was especially lovely. 4 bed, hottub and 400m from the beach.

I'd always recommend somewhere with separate bedroom/living space with under 10s as I don't want to go to bed that early. So hotel out. Stactic caravans can be really nice.

Accommodation is personal choice. I prefer lodges or cottages over caravan parks, and have never been a big holiday park type of person. Don’t mind small sites.

Eden valley

Lodges - Quite near Eden project

forest holiday

Stayed at the above two places and used them as bases to tour Cornwall.

I agree with @Lindy2, availability may be sparse this year.

I would stay near St Ives. I know Cornwall really well and the far west is worth the extra drive as so beautiful and once you are there you can get around everywhere easy for day trips. I can happily stay a week in st ives going to all
The different beaches and wandering around the town.

Its all down to what you want, budget and what's available.
