Brighton hotels and tips

We are heading off to Brighton tomorrow on a last minute jaunt. I've read so many trip advisor hotel reviews that my head is swimming. We can either book online or go and book at reception. Where would you recommend for 3 nights? We are happy with either a hotel or B and B and willing to spend maximum of £300 for accommodation.
Also has anyone got any recommendations for food and things to do for two adults?

Don't know about hotels as we only live a few miles down the road.

We've always liked Food for Friends - it's a vegetarian restaurant and does some really lovely and unusual stuff.

There's also a Choccywoccydoodah - can't vouch for the Brighton one but we went to London one recently and it was great - not cheap but huge portions and an absolute must if you like chocolate.

There's a quirky little cafe called the Marwood in the South Laines which I've never been to but a colleague liked it so much she had her wedding reception there!

Things to do - Brighton Pavilion/Museum, the Marina (great floating Chinese restaurant there, bowling, casino & multiplex cinema) Komedia, Brighton Eye, shopping, fish and chips on the Pier. There's a home game on at the Amex on Saturday if you're into footy!

There are lots of deals to be had for hotels - the HOliday inn and the Thistle (both on the seafront) have been recently refurbed and the thistle has a swimming pool... kemp town has lots of good b&b's....

the museum and pavilion are good, pier is great fun. people watching..swim in the sea...

chilli pickle for great indian food, terre a terre for amazing veggie food, the carluccios is a good one, coal shed if you want a splurge and you love meat and fish, pub du vin....there are hundreds of restaurants and cafes!!
