I am looking to get some practice 11+ books for my dd who is going to be sitting entrance exams for independent school. It looks like there are these two different types of assessment though and I'm not sure what the difference is. How am I supposed to know which ones to get?

Ask the teacher to recommend some.

Check the exam board for your area.

This website lists all regions, their exam board and what the exam entails www.elevenplusexams.co.uk/schools

Most regions/councils have their own 11 plus website or section of a website.

Hi GL and CEM are different exam types that various grammar schools in the country use for 11+.

This is usually specified on that school or boroughs website.
If you are doing 11+ for an independent school then either would be fine.
The difference is in the style that the questions are laid out in, curriculum would be the same.

The school will be able to tell you which exam board they come under. Some independent schools create their own bespoke exam though, you can usually find past paper examples on their websites.
