I have a couple of interviews coming up but struggle to sell myself and have a tendency to waffle when nervous.

The one bit of advice I would offer is give specific examples for any claims you make during the interview, e.g.

Claim: "I've contributed to staff development in my department."
Evidence: "I've been a mentor to the PGCE students and early career teachers within my department."
Impact: "It's been a rewarding experience because... [reasons]."

A bit like PEE paragraphs that English teachers ask pupils to write. It's the one bit of feedback from interviews I've had which has been quite useful, as I tend to waffle in interviews too.
