If I gave notice today to not return the next academic year would I be paid until 31 August , as pay is spread over 12 months ?
Or do I have to wait until 31 July to give notice ?

You can give notice today stating last day would be 31st August, I believe

Yes, as pp says. If you hand your notice in now and say your last day of employment will be 31st august, you will still be paid.
