This is Gordon Ramsay's recipe and it uses fresh mango. I've tried different recipes but to me, this is the best one. You poach the chicken first so it's really moist.

Best ever Coronation chicken sandwich I have ever eaten was from a little sandwich shop in the old part of Lincoln near the Castle/Cathedral. It was so good I ate it on my lunch break nearly every day for a month!

Or maybe coronation peasant? Also lots of those that go uneaten, and I got told once that a peasant gratin thing we were eating was one of his favourite dishes

I can't tell whether my irony detector is on the blink. Do you really mean peasant, as a political comment? Or pheasant?
