I think I made a heartbreaking mistake

I posted yesterday in chat about my rescue cat who bit my toddler quite badly on the leg - had to take her to the doctors and have it cleaned up. The truth is that they just don't seem to be getting along and I think the cat is jealous of dd and my attention. I love the cat and I would miss her so much but I don't know what to do. She's an older cat so I think the rescue would struggle to rehome her if I took her back.

She has 2 feliway plug insurance as well as a cat tree and plenty of hiding places up high to escape from dd. She has my whole bedroom to herself and can go outside.

I'm so confused. I don't want to risk dd being hurt again but at the same time I would be devastated if I had to return the cat. Any advice?

There are cats who are aggressive because they are scared and nervous and your cat does not sound like this.
There are also cats who become aggressive when they are over stimulated ( like some sort of processing disorder) this what your cat sounds like. I live with one such cat who had the perfect upbringing, however, he bites vicious for no reason. Even switching from enjoying being stroked to vicious biting in the blink of an eye for no obvious reason.
I am exceptional experienced cat owner whose only child is older ( so should just leave said cat alone) so I am able to manage his behaviour. If I had a very young child ( as you do) or was less experienced I would be looking for a different home for him.
Living harmoniously with such a cat is hard work even when you are able to identify all the little signs of the behaviour.
I would get back in contact with the rescue centre and explain the issue.
