Stopping her running after birds

We have had our toy poodle for a month. She is 3 next week and I think she has spent a lot of time as a flat dog previously. We live in a village in the countryside. If I walk her with my sisters dogs she is great at coming back but alone, if she sees any birds, she goes deaf and runs off chasibg them.
We start training classes this Friday but they will be in a safe enclosed space. Does anyone have any tips for managing her impulse control and recall around birds?

The best way is to never let her chase because for most dogs, nothing can beat the thrill of the chase.

So use a lead or a longline so that she never gets the chance to run off, and then while she's on a lead, you can practise distractions and keeping her focus on you instead.

How food motivated is she? Will she come back for food or a squeaky ball? If she will, just keep her on a longline and every time temptation beckons, call her back for the reward.

Eventually, the reward should be enough without the line.
