What do I need to know?

Have only ever had puppies before so this is all new to me.

any advice gratefully received.

Give them time, and expect the first week or so to be really rough.

I think you should make a safe space for them such as a crate covered with a blanket, with toys and treats nice and dark in a quiet spot where they can retreat to if feeling stressed. Also they can feel happy to go there if you have visitors and they are inclined to nip due to stress or something.

Let them come to you- this was advice given for my rescue dog.

I picked her up mid afternoon, by the evening she was sitting on my lap and nothing could move her!
Also, plenty of treats at the ready to reward all the behaviour you want (and ignore what you don't want!)

find out as much of the dog's background and history as possible
realize you are taking on a dog which may have problems caused by its past
go with a reliable rescue that will be pleased to work with you if needs be to sort any issues
never punish a dog but always show it love
make sure it has a safe space where it can go when he/she can go when they want space
