snapping at other dogs

This is a new thing. Had onlydog for a year now, she's 2 and a half, and she's mainly been very friendly with other dogs. She's sometimes scared, especially if there is more than one, but just keeps away. If she's not scared she can be a bit bouncy but was doing well with calmer meet and greets. With dogs she knows she's always very happy but this morning she was sniffing next doors dog and really snapped at him. He's such a gentle old man, I was mortified. I went on my way and for the rest of our walk she met and sniffed a couple of dogs on the lead quite happily then just as we were getting home we met a dog. We were on a narrow path and she sniffed then snapped again. Feel very sad about this because she's had so many issues being a rescue dog who missed out on socialisation, but always been great with dogs. What would you advise? Should I avoid greeting other dogs...treat for ignoring?
