Does your dog ever do that hitchy, just-been-sobbing breathing?

Mine has done it a couple of times now. It's eerily human. He seems fine, btw. In fact, I did look at him sideways last night to see if he was taking the piss (I was watching something sad, had a discrete tear etc).

Mine does it when he's inhaled something or other in the garden - bit like an overdramatic sniff!

Yes, regularly - both of them. Seems to me like they've usually inhaled something into their nasal passages. Usually passes but can actually be quite full-on.

Yes, and he does the weird yippy heavy breathing when he is dreaming. Of ducks. With his little runny paws beating away at the air. Bless.
