Dog-friendly hotels

OK, so how do these work? We'd like to use some Tesco vouchers (have loads) and go somewhere scenic for a few days during the May half term. We've done this before, pre-dog, and it's a lovely break - ambling about the countryside with the kids, meals out etc..
DH wants to take the dog (who's just turned 1) in order to make the most of walks. Have found some dog-friendly hotels, but am now thinking of the logistics. What happens during mealtimes downstairs? Would he be shut in the bedroom? Are dogs allowed in the public areas, e.g. the bar? If we wanted to use the pool/spa/gym, presumably he'd have to stay upstairs alone? What if he barked/fretted?
Would it just be simpler to send him to home-boarding and go without him Sad?

When I stayed in one, dogs were allowed in the bar, but not in the dining room. They said we could eat in the bar area if we wanted to. We did leave our dog on her own in the room for short periods and she was ok, but of course every dog is different.
