Pee on doormat

What might one do abou a huge puddle of dog pee on a fitted doormat (ie large coconut mat 'built in' to reception area)?

You can clean it up, but the dog will be able to still smell the pee and associate it with being a legit peeing area. Lots of vinegar and disinfectant to remove the smell.

It's a friend's schnauzer. I reckoned a good sluice, then bicarbonate, but all suggestions gratefully received.
