i posted my thoughts on the other hells kitchen thread about marco so rather than re-type them i'll just cut and paste.

when you see top chefs in real work practice or even someone like ramsay on his version of hells kitchen they are always perfectionists when it comes to standards. where as marco will send out food he thinks to be sub-standard as he reckons the customer won't notice. a case in point being when he cut the steak in half last night and put the two-halfs of the one steak facing up and the twi-halfs of the under-cooked steak facing down and covered in sauce.
also when ever the customer feed-back comes in he disregards anything negative off hand and trumps up any slight positive. where as most chefs only want to har the negatives as they are the things that need improving on.
i know it's most likely because he's just dealing with amateur celebs, but when you genuinely have one of the great chefs at your disposal and you paint him as a scary perfectionist who will only accept the best, the show does lose a bit of credibility when he himself takes short-cuts.

If I had a chef in my restaurant who was getting negative feed back from customers and didn't want to even make an effort to rectify his/her cock up, of course they would be sacked. If customers are not happy, they are not coming backy.
Maybe when you are a famous chef, the people just come in to star spot regardless if the food is shite.

Maybe Marco thinks that because they aren't paying for the meal, and they know it is being cooked by celebs not professional chefs that they should shut up and eat it and leave their comments on the feedback forms.
Its a bit arrogant of him, and it annoys me that he seems to despise the whole celebrity thing one minute, but then plays up his own celebrity chef status the next.
I agree about the Shameless actors - do they deliberately cast arrogant arseholes or does working on the show make them that way?
