Now, I'm a bit confused, as I thought i had started this thread already, but I'm having a rubbish day back and forth with the dog to the vet.

He is now off for surgery, so I'm very stressed, and need this to be a distraction. Sad

So...there could be a duplicate thread somewhere, and I seem to have lost itGrin.

I've discovered there will be a public vote at some point too- to get back someone from the knock out rounds.

I'm not sure I care that much about any of the acts chucked out, to be honest! Grin

I might miss next week, Dd is away so might pretend I’m interesting & actually go out (probably not though, the thought of going out is much better than actually doing it)

Welsh cakes

4 oz butter
8 oz self raising flour
3 oz caster sugar
3 oz currants
1 large egg beaten

I put butter and flour in food processor and whiz until combined
Tip into large bowl
Add caster sugar and currants and stir well
Add the egg and work into a dough
Roll out dough with rolling pin and cut with round or serrated cookie cutter. Should get about 20 pieces
Place on plate and put in fridge.

I use a heavy based frying pan to cook the Welsh cakes
Put frying pan or bake stone on medium heat and cook each side for 3 or 4 minutes.
Dredge with caster sugar.

Can be eaten warm or cold with butter or jam.

I like them plain.

My grandson can eat the whole lot in one sitting

I had a some lovely trips to Swansea area when I was younger (friends at uni there) I have fond memories of a fantastic ice cream shop in the Mumbles area, don’t know how I missed welsh cakes!

Joe's ice cream parlour or Verdis in Mumbles. Used to have a boat in Swansea Marine and often went to Mumbles (weather permitting)

I think it was Verdi’s, it’s on a bit that looks out to sea? Memory is a bit hazy, they were boozey weekends!
I love that part of Wales, beautiful countryside & beaches, it’s the only place Ive ever got a suntan in the UK

I keep trying to persuade DH to go there, he loves the look of it but is put off by the weather ( He misses Brisbane summers & uk summers just don’t come close) I might insist this year, I know he would love Mumbles & The Gower once I got him there

Can't compete with Brisbane but perhaps the scenery and lovely Mumbles or Pembroke (husband from Pembroke) might make up for lousy weather

The Gower Coast is beautiful. Rhosilli I think is one of the best beaches in the UK

The furthest I’ve been into Wales was Rhossili, I’d definitely like to see more - it’s very different to where we live in London!

Well I hope you will be successful with your Welsh cakes and charming your husband into a holiday in Wales. Rhosilli is absolutely gorgeous.
Went there once or twice on the boat. Took a good couple of hours to get there but certainly worth it.

Good luck with your cooking and I hope your husband realises that wives are always right especially about holidays
