How do you make a Victoria sandwich that is that flat on the top? Mine always rises slightly in the middle.

So hungry...

Jane's looked the tastiest. Im not a fan of blueberries but i want to eat Janes meringue.

I felt really bad for Andrew there.

I like this challenge -back to basics.
I'm a creamer though. Me 'n' Pixie.

it's all about who can do it exactly how Mary wants, not whether they can follow a technical recipe, or make a good cake! But it is all dependent on whether it follows her rules, using the right sugar, the right proportions, etc.

I love Victoria sponge. DH thinks his mum makes the best one but she doesn't put jam in it so you have to spread jam on your slice once it's been cut, weirdo! I need cake

Mine rises in the middle too even if I spread it to the outside... no idea why!

I turn mine upside down Barking to get a flat top, as mine domes too

This is a good challenge.

Sponges here are so different from what I grew up with. I think the kind my family makes seems like a Genoese.

books I had a moment of triumph when my mother was over. She's been making pav for 30+ years (since she was married, so 1977 too) and decided my recipe is nicer than hers so now uses that one. My Mum's an incredible cook so that was a good moment.

I don't like cake...but even I know a Victoria sponge needs jam AND buttercream
