I haven't been out for years so I don't know but are pubs even allowed to stay open until 1:30-2pm during a weekday? It's in a small market town not a major city. Dd claiming she was there all night until that time

Sometimes bar staff will shut the bar, but let regulars sit until they're finished tidying/locking up, or staff may even have a drink themselves if getting a taxi/lift.

If they can stay open whatever, what's all this about? I think this might be why I've been confused, apart from me being boring by having to be in my bed at 9pm most nights and never going out

They only have the option to apply for a later licence. They aren't all allowed to stay open as long as they like. The default closing time is still 11pm and pubs have to apply for a later licence which is considered in relation to the impact on local residents etc.

Getting a late license is a standard weekend/function thing, for a lot of bars.

*licence

Each venue will have their own lives song restrictions. What pub was it it's pretty easy to find out.
