If I suspect my ex is reading my texts, can I use some spyware to catch him?

I don't know if he is but he seems to know stuff that I haven't told him, and I wondered if he might be accessing my iPad which unfortunately logs my texts.

Is there any way I can track it to prove he has done this? Or is it just a case of staying logged out of the iCloud password on one device (the iPad)?

Might just be he's a good guesser, but thought I'd ask just to see if there's anything out there that would be useful for me to know about, so I can know for sure.

Does he have physical access to your iPad? If he does, then changing the PIN or password on it is the best bet.

If not, you can check to see a list of devices your account is logged in on support.apple.com/en-us/HT205064

If you don't recognise any, remove it and change your Apple password. It's also a good idea to check your security questions to make sure he wouldn't be able to guess the answers.
