I'm at a loss. I have it in my head that Aveda might be a good brand for me, but happy to consider others.
Me: Menopausal thinning hair, fine, shoulder length, dark blonde but highlighted (highlights + Olaplex three times a year), greasy roots, blow dry + heated curler once a week + very sensitive dry itchy scalp finally getting sorted (I blame a decade of nit treatments + over use of dry schampoo). Have been using Neutrogena T/Gel for a few years and yes it's helped my scalp heal but that's the only good thing about it.
I wash my hair twice a week.
I want volume + silky + non-irritating.
Many thanks in advance for any recommendations.

Your hair sound very similar to mine. Earlier this year I started using Kerastase Blonde Absolut shampoo / conditioner and alternating this with kerastase Genesis shampoo followed by the blonde conditioner and my hair has never felt healthier or looked shinier.

It's not cheap but you need to use so little that I find it lasts me ages.

I second the Kerastase recommendation. I use Kerastase Genesis shampoo, conditioner and serum and it's wonderful stuff! (I'm 53, fine hair with highlights, greasy roots but dry ends, sensitive scalp).
