What does my hair need?

I'd really love any advice.
Hair is not coloured. Dark blonde/light brown with a lot of grey.
Currently growing out a shorter style, it is now long enough to wear up in a bun but still growing out what was an amazing micro-fringe.
Aiming for all one length to shoulders.
Hair is very, very thick and tons of it. Very large curl pattern, makes ringlets when long.
I have tried co-washing and that's a no. Now I use sulfate free shampoo a lot of the time and a gentle sulfate shampoo the rest of the time. I have bought expensive curly girl conditioners. My hair doesn't like protein. It misses silicones. I end up weighing it down with too much leave-in just to get it to behave. Then it is greasy and gross within a day or two and it has to be washed again. With less products it's a great big fluffball. I have tried Boucleme products but they make my hair so heavy and my scalp reacts and I need to wash it the next day but if I use less, no decent result.
I'd love some recommendations for thoroughly cleaning gentle shampoos and water-soluble silicone conditioners/products.
