If you have used this do you recommend using one or two coats of the coloured varnish before applying the top coat?

I do 2 coats, then top coat. Really love these.

I do base-coat, two coats and then topcoat. Genuinely lasts 6-7 days.

I use OPI Nail Envy as a base coat then apply two coats of colour, then the gel top coat. Bloody amazing stuff.

It's designed so you don't need a base coat. Nail Envy isn't a base coat, but it won't do your nails any harm to use it.

is it expensive and does it come off with normal nail varnish remover?

Definitely comes off with a normal nail varnish remover. I use base coat so it doesn't stain my nails.

Of course it can be used AS A base coat. And yes, Essie gel is formulated so that it doesn't need a base coat but if you're using a dark colour then of course it makes sense to use one.
