Another holiday wardrobe thread!

I'm going on a 2 week beach holiday in September and while I LOVE the idea of a capsule holiday wardrobe but have never managed to achieve one. I start with good intentions but usually panic-buy a bunch of unsuitable clothes just before we leave, overpack my suitcase and then end up wearing about 10% of the things I've brought with me while sighing over the people in the resort that manage to pull off a look of relaxed elegance.

I'll be spending most of my days sunbathing (well, lounging in the shade!) or snorkeling with maybe 1 or 2 trips for sight seeing / shopping in the city. We'll be going to restaurants in the evenings, nothing too posh but most places seem to have a smart casual dress code (long trousers for men) and the weather will be around 36 degrees. Dress code for breakfast is 'no swimwear' (or at least, no visible swimwear).

Capsule wardrobe experts, what would you take on a holiday like this?
I'm 5'10 and size 18 hourglass shape.
