Is volume removing shampoo a thing?

So I've had my (very thick) hair cut and it's lovely but maybe just a little too insanely voluminous. I feel a bit like an extra from Dallas. What can I use to tame it down a bit without completely losing the bounce?

It's pretty straight, little bit of a wave but no curl. Any ideas?

I pick ones that have words like "sleek" in the description but no idea of that is the right thing to do.
When my hair is done in the salon, hairdressers seem to use products that are all about the "moisture " and "shine".
