I would really like to wear eye shadow more but tend to get such a horrible skin irration from even one day's wear. Any shadow with sparkle seems to be the worse.
Any ideas?

I would try bare minerals - less crap in them, but you need to be most careful removing shadows. The rubbing and chemicals cause more irritation than the shadows themselves.

I have the same problem; I have found Mally shadow sticks haven't caused any trouble - even the sparkly ones; sadly only available from QVC, but you can usually get them from eBay too. I used to use Stila, but found that they tend to crease on me now I'm getting older.

I recommend Boots No 7 or Clinique.
I have very sensitive eyes and find No 7 is great although not a huge colour range.
