A pretty gilet would look nice and very boho as well as being a useful addition to your wardrobe for other occasions

What colour would you go for?

I would go for a beige/mousey coloured one which you could wear again. I think it could look really cool and just a bit different to the usual shawls/pashminas

Would a gilet still mean I'd be cold though with arms out?

Ps I love the idea and hadn't thought of it, just worried about a chill

I should also point out I'm not wearing a hat

I'd go with a black bolero or a shawl/scarf that could be left in a bag or worn depending on the temperature.
