The obvious answer is a hat but I dont really wear them well Confused

Going abroad where it will bloody better be hot. I will be spending a lot of time in the pool, my hair is quite dry (hightlighted) should I just lob a load of conditioner in it? Coconut oil? (or would it then fry??) or is there some miracle product for this very purpose?

Never ever coconut oil it will fry it to a crisp OMG,lots of conditioner if you don't want to wear a hat or even a nice coloured baseball cap you can get some really nice coloured one's.
Make sure you rinse you hair really well when you come out of the water and wrap lightly in a towel,I let my hair dry naturally out of sunlight but I have the added problem of having waist length hair and it takes ages, you can buy a hair mask creme for the sun but not sure as to how good it is I've never tried it as I would need a couple of bottles of the stuff.
