Highlights help please?

Ok, I have light/mid brown hair which really lightens in the sun and I end up with loads of coppery tones through it which I hate..

I've tried ash dyes and they work to some degree but I think in a way they actually add more red.

How can I get rid of the copper tones? I'd really love highlights like these photos - could a hairdresser do this? I think they'd need to neutralise the copper tones a bit but really not sure if they can..
