British Turkey have asked us to find out how Mumsnetters use their leftover turkey during the festive season.

Here’s what they say, “British Turkey is a campaign to encourage people to eat more delicious British-farmed turkey both at Christmas and all year round. Turkey is a great versatile meat as it carries flavours really well, and what’s more, the breast meat is a really healthy choice as it is high in protein and lower in fat than any other mainstream meat so eating turkey makes perfect sense at family mealtimes and for those watching their weight. Look out for mince, breast fillets, steaks and diced thigh in supermarkets.

“However, Christmas is just around the corner and focus will be on buying traditional whole turkeys and large joints for the Big Day. We know that cooking a whole turkey for the Christmas table may seem a little daunting for some, but it certainly has its benefits. So, do you buy a whole turkey for Christmas, or at another point during the season? If so, what do you do with the leftovers (or do you manage to finish the whole turkey on Christmas day?!)? Perhaps you make turkey sandwiches for lunch for the next few days? Or maybe you make a lovely turkey curry with the leftovers? Whatever it is, we’d love to hear it!

I make one big turkey casserole which lasts for a few meals.

We don't have a turkey for Christmas, because we have on in late November for Thanksgiving. However, we do still have turkey leftovers, so our top two dishes to use them up are 1) turkey and vegetable pot pie, using puff pastry and the breast meat and 2) the thigh and leg meat gets made into biryani where the spices are strong and it doesn't matter if the meat is light or dark. The carcass gets made into stock and that makes a third meal of risotto.

We have another turkey dinner on Boxing day with all the leftovers from Christmas day :) Any more is for sandwiches!

boxing day is always cold turkey, chips/jackets pots and pickles and then with the rest , we make turkey curry yummy

Just a crown, I don't like turkey stock. I love Turkey and stuffing sandwiches.

Turkey is normally used by boxing day, sandwiches for christmas tea time and cold on boxing day in a salad

I've inherited 2 family tradition recipes for leftover turkey.
One is my Nana's turkey soup, with veg, barley etc - lovely!
The other is my Mum's leftover dish which she christened "turkey thingy" and is made with turkey, broccoli, condensed soup, breadcrumbs, cheese and anything else she could throw in it. It sounds vile but it tastes divine!

The favourite has always been turkey sandwiches and cold meats the next day, but my new favourite has to be turkey and ham soup. Delicious and filling.

we buy a turkey crown and any leftovers are made into sandwiches and the traditional turkey curry.

Whole turkey.
This year, we'll be using the leftovers for the sandwiches at Evie's 1st birthday party on Boxing Day.

The day after boxing day we always have Turkey, Mash and pickles. We also use any leftovers for sandwiches and freeze some for sandwiches in Jan.

We usually buy a big turkey so we have lots of leftovers... Normally we have turkey sandwiches on Boxing Day (post traditional walk on the beach) with stuffing and cranberry sauce.

We also love turkey croquettes, so going to give them a go on Boxing Day this year. Will be a good way of using up some of the other food in the house, and they're different enough so we don't feel like we're repeating the same meal again. We love tapas, so will serve with mini portions - potatoes with garlic, cauliflower cheese and tomato/mozarella salad.

We make Turkey and Picalillie sandwiches, then we use the turkey carcass, and onions and veg to make a delicious hearty soup.

I make an enormous pot of turkey broth which I freeze in individual portions. It keeps us going through the cold weather.

Usually whole bird, and then leftovers go into sandwiches, cold meat and mash, I make a soup with the bones and lots of veg and a couple of Turkey bacon and vegetable pies for the freezer.

We're a vegetarian family , but we do use fake turkey as an alternative: if we have any leftovers we normally cube it and use it in a lovely mixed salad

Always do a risotto and then a curry.
