British Turkey have asked us to find out how Mumsnetters use their leftover turkey during the festive season.

Here’s what they say, “British Turkey is a campaign to encourage people to eat more delicious British-farmed turkey both at Christmas and all year round. Turkey is a great versatile meat as it carries flavours really well, and what’s more, the breast meat is a really healthy choice as it is high in protein and lower in fat than any other mainstream meat so eating turkey makes perfect sense at family mealtimes and for those watching their weight. Look out for mince, breast fillets, steaks and diced thigh in supermarkets.

“However, Christmas is just around the corner and focus will be on buying traditional whole turkeys and large joints for the Big Day. British Turkey is here to help with everything you need to roast your turkey to perfection. We know that cooking a whole turkey for the Christmas table may seem a little daunting for some, but it certainly has its benefits. As well as having the most festive nostalgia, a whole bird is best value for money - for about the same price as a crown or a ready stuffed breast joint, you get the lovely leg meat. So, do you buy a whole turkey for Christmas, or at another point during the season? If so, what do you do with the leftovers (or do you manage to finish the whole turkey on Christmas day?!)? Perhaps you make turkey sandwiches for lunch for the next few days? Or maybe you make a lovely turkey curry with the leftovers? Whatever it is, we’d love to hear it!

My mum always has three pieces of meat for Christmas Eve, Christmas Day and Boxing Day. We have the leftovers with nice cheeses and pickles which last until about New Years' Eve!

We have a whole turkey as it has to go around eight of us.
We have the leftovers for sandwiches and with some chips. Any leftover bits then go into a curry.

We buy a big turkey as we have lots of people over for christmas dinner.
With left overs we have turkey casserole, curry and sandwiches :)

We're not hosting this year but DH wants to get a turkey a few days after Christmas Day, mainly so he can make his favourite leftover recipe.
Turkey Pancakes (always served wit peas. ALWAYS.)
Cut the turkey meat into chunks.
Use leftover gravy to make a sauce (Add to a roux, like you make white sauce by adding milk to a roux)
Heat the turkey in the sauce.
Make pancakes
Use the pancakes to make a parcel of the turkey mixture.
It's a tradition and it has never not happened!

We will use the left overs on Boxing day for the next wave of Christmas food 'picky bits'

If there is anything left then you cant beat a good Turkey Curry!

We have 40 people around on boxing day!

So normally becomes either sliced turkey for people to help themselves to or turkey sandwiches

We always have a Turkey Crown and there's usually only enough left for sandwiches the following day.

Don't have any leftovers as I tend just to buy Turkey breast as that is the leanest meat and I only really like lean meat :)

buy a smaller turkey, we rarely have anything left. Having said that I do buy at least 2 if not 3 turkeys as we love them so much and often eat them right through January. If the meat is cooked you can freeze it as well

I usually buy a turkey crown. We have quite a bit left over though! We have turkey and mayo sandwiches on Boxing Day, the rest of it is pulled apart and frozen - then during January we use it up - i used to pop it in curries (but found it still too dry) but Ive found a much better way of using it up - we make pizza bases and add the turkey which has been defrosted and put in a pan and we coat it with melted butter and garlic and throw on peppers mushrooms onions and top with cheese nom nom verrrrrry tasty!

We get a huge one as we all love the leftovers.
In fact we sometimes buy a frozen one as soon as they become available to have for Sunday lunch.
I find they are really economical considering how many meals can be made from them.
Our favourite leftover recipes are;

Tukey/ham/pesto paninis
Turkey, ham and leek pie/pastys
Turkey fajitas or quesadillas
Turkey tagine
Turkey Cesar salad
Turkey soup
Turkey stock.

Oh and a few treats for the dog and cat as well!
