Hello. As sure as eggs is eggs, you've had 'em fried, boiled, poached or scrambled for breakfast. But how often do you use eggs in your meals at other times of the day?

The folks at British Lion eggs have challenged Mumsnetters to come up some great main-meal recipes that use eggs. So please post yours here!

Everyone who posts a recipe (main-meal only, remember) will have their name put in a hat for a chance to win £100 in shopping vouchers to spend in stores including Topshop, Argos, Debenhams, Next and John Lewis.

And we may be asking the writers of the best recipes to upload them to our Recipes section - if you haven't already, of course...

I make a ratatouille from 1 onion, 1 aubergine, 2 courgettes, 2 peppers, a carton of chopped tomatoes, clove of garlic and a dash of balsamic.

When it's nearly ready, I make a few wells in it and break an egg into each.
Put a lid on and cook until the egg is set. Serve with crusty bread and a sprinkling of fresh basil.

fritatta - thinly sliced spuds cooked in microwave....

an onion, bacon, pepper and whatever veg you have (I have used sliced leek (which I have nuked beforehand) mushrooms, sweetcorn etc....fried in frying pan with a bit of oil....

meanwhile cook some v small pasta shapes....

Bung everything together in frying pan mix together well and add 2 or 3 eggs (depending on how much other "stuff" you have.....

Once cooked at the bottom, bung in oven for 20mins or so....

Am sure you could add cheese but DD(3) dairy free so I don't do that....

My DC love it and you can serve left overs cold too Grin

Also you can't beat a good pancake, DC get v excited when I manage to flip them Grin

Except DD's are made with neocate but she loves them and you can make them savoury or sweet iyswim Smile

Fried eggs with mash and dipping veg like asparagus and carrot sticks BUT fry the eggs inside metal biscuit cutter shapes - the dd's love it when they can eat star, circle, butterfly, rabbit, etc shaped eggs! Grin

An easy-peasy meaty-eggy recipe which is full of protein:
Finely chop and lightly fry one small onion (1-2 minutes)
Add some (one punch size - sorry not sure how much it weighs :) ) mince meat into the pan and fry until mince meat browned
Grate one or two tomatoes into the pan and cook until tomato juices evaporate
Then break a couple of eggs on top, and cook lightly,
Add salt and black pepper. Also can add some delicious herbs such as fresh mint or even dry mint or oregano or whatever else you like... I like to add fresh parsely too.

Hmmm.. delicious.
You can add grated cheese on top. when it is hot from the heat, it also melts the cheese a bit and it tastes really yummy.
My child being anaemic, this easy recipe gives lots of iron in the shape of meat and eggs...

frittomeletto - a sort of frittata-omlette-risotto mix that uses up lots of leftovers and is very quick and easy. The amounts in the recipe are deliberately vague as it is more of an approach to cooking than a definitive recipe and depends on what you have in.

Amounts below are for one person, just increase as required

The basic 'plain' version:
2 eggs - beaten together
pre-cooked rice - approx 4 good spoonfuls (I like the basmati best), pre-warmed if possible
chopped/grated cheese - about size of a match box - whatever you like - from cheddar to feta to stilton to Camembert etc

and then as many of these as you have and feel like:
onion - finely chopped and softened (can be regular onions, red onions, spring onions)
bit of chopped ham/bacon (cooked)/smoked salmon etc
chopped red/green/yellow pepper - can be fresh or roasted or from jars
artichoke hearts chopped
leftover veg such as peas, beans, broccoli (chopped into small bite size bits if not already small)
small pinch of favourite dried herbs or some freshly chopped fresh herbs to taste
etc etc - you get the idea!

  • use a small frying pan if just doing this for one person - melt a little butter and use it to pre-fry anything that needs it (onions, bacon, pepper...)

  • when they are ready add anything else that just needs to be warmed through - rice, herbs, ham, leftover veg and just cook for a minute or so to warm them through.

  • take pan off the heat.

  • mix the cheese in with the beaten egg, then tip it all quickly onto the rice mix in the frying pan and mix it all together.

  • put back on the heat and treat it like an omlette, cooking gently on both sides (or finishing under the grill or in the oven if it won't flip easily).

  • It sounds weird I know but it actually is ready in moments and is really yummy, the rice makes it all very light and fluffy.

Serve with something salady.

If I'm in a real hurry I'll do the scramblomletto (scrambled egg version) - which sounds even worse but is also fab.

Same ingredients as above, I just use a pyrex pint measuring jug to make it in.

-Zap any onion/bacon etc so cooked (ham and spring onions don't really need any pre-cooking so make it faster)
-Warm rice and any other bits being used for a few moments
-Add the egg and cheese in, making sure the eggs are well beaten and that the mixture is well mixed

  • zap for about 30 seconds and then give everything a stir. Depending on your microwave and how cooked everything is, put back in and zap again for 20 seconds, give another stir.
  • Repeat until eggs are cooked through but not overcooked - on my microwave it is about 1min to 1min 30 seconds depending on how much stuff is in it.
  • Tip onto a plate and serve - it's like a very tasty light fluffy scrambled egg but more. A chopped tomato with it is good or bit of salad but doesn't even need that really.

un-named but quick and delicious recipe by my dad:

Boil spaghetti/taglietelle
Fry some chopped up bacon and diced onion (any kind inc. leeks/spring onions work)
When cooked, drain the pasta, then pour in some double cream (or single, depending on how calorific you want it!) and stir through.
Add the bacon and onion
Break an egg or two into the pan and stir until cooked through
Serve in a bowl topped with grated cheese

Quantities are different every time he makes it, so basically it depends on your own taste as to how much of everything you want to use, and how many people it's feeding. I know it's a bit like spaghetti carbonara, but a bit less posh Grin

I am now very hungry and wishing I had all of the above in the fridge!

Egg lokshen - what a blast from the past! I haven't had that in years.

My mum used to make the lazy version, which we children re-named Chinese Soup.

Slice a few spring onion into very fine rings, and have half a cupful or so of frozen peas and/or sweetcorn ready.

Beat an egg to within an inch of its life (sapphireWink).

Bring a pint or two of stock to a rolling boil and gradually drizzle the egg in, moving around the pan so it always goes into a boiling area.

Add the prepared veg, and serve immediately.

Spicy eggs

Fry thickly sliced onion in a little oil (and/or butter if liked) for 2 mins (less if you like crunchy onion, more if you don't) and add
1 - 2 chopped green chillies
1/4 tsp red chilli powder
1/2 tsp ground coriander (if you have it)
salt to taste
fry for 1 min then add big handful of chopped fresh green coriander. Mix well and then crack 4-6 eggs into the pan and stir gently until cooked.
I like it just set and not too mixed together ie can still see white and yolk separately but up to you - mix more if like a more uniform result.

Eat with hot pitta or naan bread but also good in sandwich with bread.
And salad
Adjust spices to suit your family tastebuds.

Also my favourite standby snack - fried egg sandwich!
Take 2 slices of sandwich loaf and butter well
Fry egg until white is set but yolk still bit runny (not too runny and not too set!)
Place between bread slices, add ketchup and brown sauce to taste and eat!
Mmmmm!
Could add some salad for a light meal Grin

This frittata sound simple but is delicious:
Fry 1chopped onion, garlic and a pack of sliced mini courgettes till caramelly.
Whisk four eggs and pour over onion mix.
Cook till set.

This is a heart attack waiting to happen meal, and I never serve it to dc's, it is my dad's...

'Cheese and egg in the oven'

Grease an ovenproof dish
Slice cheese and line the dish, keep over lining until the dish is almost full.
Crack an egg in the middle and add a dash of milk.
Bake in the oven until egg is cooked and cheese is bubbling away.
