Hello. As sure as eggs is eggs, you've had 'em fried, boiled, poached or scrambled for breakfast. But how often do you use eggs in your meals at other times of the day?

The folks at British Lion eggs have challenged Mumsnetters to come up some great main-meal recipes that use eggs. So please post yours here!

Everyone who posts a recipe (main-meal only, remember) will have their name put in a hat for a chance to win £100 in shopping vouchers to spend in stores including Topshop, Argos, Debenhams, Next and John Lewis.

And we may be asking the writers of the best recipes to upload them to our Recipes section - if you haven't already, of course...

Eggy Potato and Vege Pie

450 g potatoes sliced thinly (peeled if thick skins, otherwise I don't bother)
2 leeks, thinly sliced
1 small brocolli, in florets
Two handfuls cooked peas
300 ml milk
3 medium tomatoes, sliced
2 eggs
50 g cheddar

Preheat oven to 200 c.

Lay half of the potatoes on the bottom of a greased casserole dish or glass bowl. Cover with sliced leeks, then the brocolli, then the tomato. Cover with the rest of the potatoes.

Sprinkle peas over the top

Beat the eggs and milk together. Pour on top.

Cover and cook for 45 minutes until potatoes are cooked and cheese is golden.

welsh rarebit with sage

8 0z (225gms) cheddar cheese

1 dsp of chopped fresh sage

1 large beaten egg

1 tsp of mustard powder

4 tbs of brown ale (optional)

4 doorstep slices of bread

Toast one side of the bread,mix the rest of the ingredients together and then spread over the untoasted side and grill for 3-5 mins until golden and bubbly...

Scoff!

Baked Eggs.

Mashed potato
Eggs
Cheese

Put mashed potato in an ovenproof dish and make two wells in it. Crack and egg in each cover with grated cheese and bake.

Serve with grilled bacon and broccoli or other veg. Yum

Can also do with a jacket potato. Halve baked spuds, scoop out cooked potato and mash with butter and season. Put back in jacket shell and make well and crack egg into it. Cover with grated cheese and bake.

Serve as above.

Mashed potato scotch eggs - kids love em!

Make some nice cheesy mashed potato (quite firm, not buttery)
Shape round a hard boiled egg
Roll in flour, then beaten egg, then fine breadcrumbs
Deep fry

Not that healthy - but a great treat.

This is known as "eggy thing" in our house!

Basic version: Boil pasta. Beat one egg per person and add grated cheese and a couple of dashes of Worcestershire Sauce. Pour mixture over the drained pasta and return to the heat until the egg is set and cooked through.

Lots of variations - you can add any combination of peas, sweetcorn, chopped cooked bacon, ham or chicken. If you want a more oriental version add soy sauce instead of Worcestershire Sauce and add bamboo shoots, etc.

Emergency Quiche

Bought pastry flan case (store cupboard item) or at a push, ready rolled shortcrust pastry...
Eggs (how many depends on size of pastry case and amount of other ingredients)
Dollop of crème fraîche or soured cream
small pack of smoked salmon trimmings (always a packet in the freezer)
salt, pepper and dill
Anything else you want to chuck in that's been hanging around in the fridge eg. cooked sliced new potatoes, couple of asparagus stalks, broccoli, courgette etc

Lightly beat eggs with crème fraîche & seasoning.
Put all other ingredients in pastry case. Pour over eggy mixture.
Bake.

Other standby quick egg based suppers I do often are Kedgeree (I do a fishy version and a veggie version) Egg fried rice, Spanish omelette/ frittata and pasta carbonara.

My favourite recipe is this one, for Souffléd Cauliflower
1 cauliflower
150 ml mayonnaise
1 tsp ish mustard, to your taste
zest of 1/2 lemon
3 eggs
75-100g grated cheese (strong Cheddar or Gruyère) salt and pepper
Cut cauli into florets and par boil.
Tip into a well buttered dish
Mix together mayo, mustard, grated lemon zest , egg yolks and most of the cheese. Season.
Whisk egg whites until stiff and fold in.
Spoon mixture over the cauli, sprinkle rest of chhese over the top and bake 25 mins Gas 5.

DD loves eggs. Favourite recipe is kedgeree.

Poach plain and smoked haddock in milk, drain, reserve milk.
Gently fry some onions with butter and oil and a teaspoon of mild curry powder and garam masala. Add basmati rice and stir, then add the reserved milk and cook until rice is tender.
Stir in the cooked fish and sprinkle with lots of fresh coriander or parsley. Serve topped with a lightly poached egg for each person.

mushroom/chicken foo yung - serves 2-3

1 chicken breast, sliced into small pieces/or 2 large mushrooms chopped
beansprouts(handful)
6 eggs
soysauce
chinese 5 spice

fry chicken/mushroom in a little olive oil until browned,
add beansprouts, tsp 5 pice and soy sauce, fry for 2 min then put mixture aside.
beat eggs with a splash of milk
add eggs to a large frying pan and cook gently, as omlette begins to form, add chicken/mushroom mixture to one side of omlette and fold over, flip omlette to brown both sides evenly.
serve.
To make a more substantial meal for 4-5 people, chop foo young into cubes and toss in some cooked noodles, soy sauce to taste.

Low Fat "quiche". I make this for my Slimming World groups: low fat as there is no pastry! We LOVE eggs as you can eat as many as you want at Slimming World!

Cook 3 Quorn sausages.
Roughly chop the cooked sausages and throw in a Pyrex dish with chopped Sping onions. Season.
Whizz up with a hand blender one tub of very low fat onion and chive cottage cottage cheese with 3 eggs and pour over the sausages and Spring onions. Lay sliced tomatoes on the top and bake at approx 180 until firm.

Other variations on this include chopping lean grilled bacon into bits and chuck into a dish along with cooked onions, mushrooms and some low fat cheddar. Add cooked macaroni and then blended very low fat cottage cheese and eggs and bake the same way as before.

Serve with a big salad or baked beans for a hearty but healthy lunch.

My favourite is Eggs Benedict - poached eggs with hollandaise sauce on spinach or smoked salmon in a muffin.
One day I hope I'll learn how to make hollandaise sauce to go with my poached eggs.
Meanwhile I'll have to hope my parents treat us to another trip to the fantastic ground floor restaurant at Fortnums Wink Everything you could hope for for breakfast or brunch, including tea in a silver tea-pot !

Cheesy Beany Omelette - beat 3 eggs with a dash of milk and black pepper then fry in a large pan with light olive oil. When the underside is cooked, add a couple of tbsps baked beans and some strong grated cheese to half of the omelette, fold in half and cook until the cheesy beans are oozing out the side. Definite comfort food!

I also love poached eggs, served simply with a bit of watercress and some sliced tomatoes on thick crusty toast.

This thread is making me feel hungry!

Mini cheesy oven omelettes

Grease a 12 hole cupcake tin (I use a silicon one). Beat 4 eggs, add 2 heaped tablespoons flour and a pinch of salt, beat well. Stir in a big handful of grated cheese. Divide mixture between the cupcake holes and bake at Gas 7 for 15 mins or until set in the middle.

You can add onion, ham, sweetcorn, chopped tomato, peppers, anything you like really for a bit of variation!

Lovely served hot with a big green salad and new potatoes, or cold as a snack.

Light Lunch
...................
Poach 2 eggs (or softboil and peel if like me you are slightly intimidated by poaching) and chuck some green beans in the water till edible.
Split and lightly toast a wholemeal English muffin and butter.
Place an egg on each muffin.
Top with a generous amount of smoked salmon (trimmings are fine.)
Balance the green beans on top or artfully arrange them around the edge.
Drizzle cold hollandaise sauce from a jar over the lot.
Salt & pepper to taste.

Smoked salmon could be replaced with crispy bacon or buttery mushrooms.

I love all the above recipes but for something a bit different I quite like egg drop soups, which are chinese broth type soups with eggs dropped in and swirled around.
Another favourite is Nasi goreng pattaya which is basically chicken fried rice enclosed in an omelette parcel drizzled with chilli sauce.
Basic recipe:
Fry onion and garlic in oil add diced chicken meat (leg works fine) and some diced carrots. Stir fry till cooked. Then add frozen peas and cooked rice and season with soy sauce, a little ketchup and some white pepper. Cook till heated through.
Take 2 eggs and beat with a pinch of salt, add to a frying pan and make a very thin omelette with them. When omelette is ready tip the fried rice into the centre of the omelette and fold into an envelope-shaped parcel. Drizzle with your favourite chilli sauce.
For dessert I would finish with chocolate mousse made with just eggs and good quality chocolate. Actually I would be happy to eat chocolate mousse as a main course, hmmm.

Lazy person's cheese sauce, can be used in any 'bake in the oven' recipe, such as macaroni cheese or cauliflower cheese. I started using it because I can never be bothered with making a roux, whisking the milk in and the lumps out. Here's my cauliflower cheese recipe.

Cook your cauliflower until 'al dente' or however you like it.

In a jug stir together one pint of plain yoghurt, two eggs and some cheese. If you're being really lazy just cut the cheese into chunks, don't bother grating. I use about 1/2 lb/1kg but that's because I love my cheese.

Place the cauliflower in an oven proof dish and pour over the yoghurt/egg mixture. Put a bit more cheese on the top and stick it in the oven for 25-30 minutes.

Voila - one lazy person's cauliflower cheese.

Atholl Brose

One bottle of Scotch whisky
Half Pint of double cream
450g of clear honey
The whites of six large eggs
One handful of fine ground oatmeal

Directions

  1. Soak the oatmeal with the Scotch whisky and set aside.
  1. Beat the egg whites until they become stiff.
  1. Fold the cream into the egg white mixture.
  1. Add the honey.
  1. Blend in the whisky and oatmeal mixture at a slow but steady pace.
  1. Pour the liquid into some bottles and set aside for one week. Shake each bottle of Atholl Brose each day.

Superlight Breakfast Pancakes

2 eggs - separated.
125g self raising flour
approx 100ml milk

Whisk egg whites until stiff and set aside. In another bowl beat together the egg yolks, flour and milk to make a thick batter (adjust milk as needed depending on size of eggs). Fold in egg whites gently.

Fry tablespoons of batter on a hot greased griddle or heavy frying pan for 1-2 mins each side.

Serve with crispy bacon and maple syrup.
