Hello. As sure as eggs is eggs, you've had 'em fried, boiled, poached or scrambled for breakfast. But how often do you use eggs in your meals at other times of the day?

The folks at British Lion eggs have challenged Mumsnetters to come up some great main-meal recipes that use eggs. So please post yours here!

Everyone who posts a recipe (main-meal only, remember) will have their name put in a hat for a chance to win £100 in shopping vouchers to spend in stores including Topshop, Argos, Debenhams, Next and John Lewis.

And we may be asking the writers of the best recipes to upload them to our Recipes section - if you haven't already, of course...

This is a quick way of using up leftover from a previous meal:

Fry a chopped onion
Add a tin of smoked oysters and include the oil, heat through
Add 3 eggs to the side of the pan and cook, then break them up
Add some leftover boiled rice and some left over veg, and stir.
Sprinkle over a bit of soy sauce (optional).

Really scrumptious!

'egg in a cup'... scrambled eggs in the microwave.

Beat 2 eggs in cup, add salt and pepper and microwave for 1 minute.

Turn out on to a plate and add chopped smoked salmon and grated Parmesan and serve with rocket and spinach salad.

Ultra quick hot and tasty tea or lunch :)

Also v low in carb :)

baked eggs

put spinach on the bottom of a ramekin or small baking dish, then chopped tomato, break and egg over itthen sprinkle with grated cheese. Then bake in the oven until the egg is cooked and the cheese has browned.

Stuffed eggs
Hard boil as many eggs as you want
Cut in half and pop out yolks
Mash yolks with a little bovril (or anchovy essence) and some mayonaisse
Dollop back into the halved whites
Even kids not keen on eggs scoff these

We're more likely to have eggs for a main meal than for breakfast.

Green Eggs (No Ham)

Finely chop or slice an onion and sweat gently in veg oil while preparing the rest of the ingredients.

Defrost 5 lumps of frozen chopped spinach in the microwave and drain.

Cook a cupful of peas.

Beat up 4 eggs.

Combine all ingredients (including onion) in a bowl. Season, and mix well. I like to use a squeeze of garlic purée, some Marigold stock powder, and freshly-ground black pepper.

Fry in dollops or as an omellette.

To turn it into Green Eggs And Ham, fry in dollops, immediately lay a thin slice of meat on each dollop as soon as you have put it in the pan, and turn egg and meat together once the eggy mixture has set.

Mmmm, never had an egg lasagne before- not sure I want to either Wink

New Potato casserole with fresh greens
Thinly slice 1lb new pots

Slice one red onion
Cook these in a large frying pan in in olive oil for about 10 minutes, season well.
Cook until golden and tender.
Meanwhile bring a pan of water to the boil, add 12oz spring greens or savoy cabbage thinly sliced and cook for 2 mins until wilted.
Heat 1tbsp olive oil in a pan and add 1 crushed garlic and 1 chopped dried chili, cook for one minute until golden.
Add the greens and seasoning and cook 3/4 mins until just browned.
Mix green with pots and transfer to a shallow dish.
Make 3-4 indentations in the top and break an egg into each.
Bake for 8-10 mins until eggs are just set.
Serve immediately with plenty of crusty bread and a nice rustic red wine.

Bread and Butter Pudding

Beat 3 eggs with 250ml of milk and 2 teable spoons of caster sugar
Soak 2 handfuls of currents in ginger wine or cointrau (overnight of possible)
Cut 10 slices of buttered white bread or brioche (crusts remove) into quarters
Layer the bread and currants in a pirex bowl.
Pour on the egg and milk mixture - leave for at least an hour.
Sprinkle dememrara sugar ontop
Bake in a moderate oven

Bacon and egg muffins

Hard boil 3 eggs, cool, de-shell and chop roughly
Cook one packet of bacon bts until crispy
Grate a generous amount of strong cheddar

Combine the egg, cheese and bacon using maionaisse, mustard add a dash of worcester sauce (you can also add some garlic powder of you wish)

Spread this onto halved muffins and grill until golden brown

Asparagus and cheese tart

make shortcrust pastry or buy ready made if feeling lazy, bake for 10 mins, brush with egg and bake for 5 mins more
steam some asparagus and put them in pastry case
beat a couple of eggs with 150 ml of yogurt or creme fraiche or cream (if I don't have much in the way of cream I use another egg)
season mixture and add whatever cheese I have in the fridge grated
pour over tart and bake for 30-40 minutes more

6 slices of white bread
Massala paste - homemade or shop bought
4 eggs
Vegetable oil

Make 3 sandwhiches using the bread and massala paste. Only use a thin covering if you don't want it to be too hot.

Cut the sandwhiches into triangular quarters.

Dip the sandwhiches in whisked egg mixture.

Fry until golden brown.

Serve with cucumber and mint raita as a starter, or a snack anytime.

Really quick, easy and delicious.

Quick an easy breakfast recipe... baked ham and eggs!

Preheat oven to 180degC.

Firstly you need a muffin tin. Line a muffin hole with a piece of ham (or several pieces if using wafer thin ham). Push the ham in so you essentially get a ham case. Crack an egg into the ham case. Pour in a dash of single cream and season. Place in the oven for 15minutes.

Eat!

Baked eggs and peppers

A great veggie recipe! (for 2)

4 eggs
two peppers -diced
red onion diced
1x 400g tin or toamtoes
heaped teaspoon of smoked paprika
slat and pepper to taste
olive oil

Pre-heat oven to 180C.

Fry onions until soft in the oil.

Add peppers and paprika, and fry for 5 mins.

Add tomatoes and simmer for ten minutes.

Divide mixture between ramekins

Make a small hollow in the tomatoes mixture and crack an egg into each.

Bake for 15-20 minutes, or until set to your liking

Serve with garlic bread and salad!

Scrambled egg tortilla wraps

We've always called these "Vancouver wraps" in my house but don't ask me why!

Scramble two eggs on the hob with a dash of milk and black pepper.

For the salsa: Chop up some fresh tomatoes, a small onion, and a mile red chilli. Add chopped coriander and a teaspoon of lemon juice. Mix up well and add a pinch of salt.

Dish up the eggs and salsa into warm tortillas, and serve with grated cheese and sour cream or guacamole. It's also great with warm black beans.

I was going to do bread and butter pud but IlsaLund beat me to it!

Family favourite here is simply a cheese and onion quiche. Much tastier than the insipid ones you buy from the supermarket (though you can cheat with bought pastry!)

7oz strong cheddar cheese, grated
half a finely chopped onion
1 tomato, sliced
3 eggs
1/4pt milk
English mustard
salt, pepper
8oz plain flour
4oz butter/marg

Rub fat into flour until it resembles breadcrumbs, add water a little at a time until the mixture holds together, then put in fridge for half an hour to rest.

Roll out pastry and line a quiche/flan dish, about 10" in diameter.

Put half the cheese into the dish, spread out evenly. Cover with onion, then spread out the other half of the cheese.

Beat eggs with milk. Season, and add mustard to taste (I usually used half a tsp of mustard powder, mixed first with a little milk).

Pour egg mix over the cheese and onion, decorate top with sliced tomato and bake gas 6 200C for 35-40 mins or until golden on top and not looking wobbly!

Serve with minted boiled new potatoes and peas. (At this time of year, Jersey Royals are fantastic)

Oven baked Ommelette - Great for picnics or packed lunches too!

8 eggs
3 Courgettes grated
200g cheese grated
Any other veg you fancy
Bacon again optional
salt and pepper

Line a loaf tin with baking parchment and mix all your ingrediants togther into a sort of thick but pourable mixture, then pour into the lined loaf tin and bake in the oven on 180c for about 30 minutes or until a skewer inserted into the middle of the omlette loaf comes out clean.

Cheese, Egg and Potato Pie:

Ingredients: Eggs, Potatoes, Milk, Butter, Cheddar Cheese. (Optional Tomato)

Make a bowl of buttery, fluffy mash potato (one medium potato for each person)- add chopped boiled eggs (one egg for each person) and grated cheese (one handful for each person)- stir well - place in buttered oven dish (top with slices of tomato if liked) and bake until golden brown on top in a medium oven (180 degrees C for about 15-20 mins).

My children like this 'pie' served with either baked beans, or with broccoli, or with salad.

Spanish baked eggs - quick and delicious (even better with bottle of wine, crusty bed, green salad):

1 onion finely sliced
1 pepper cut into strips
100 ish grams chorizo - sliced into 5mm thick rounds, then halve the rounds
1 clove garlic finely chopped
4-5 medium tomatoes - deseeded and chopped (skin if you can be bothered)
4 eggs
gruyere or cheddar cheese

Fry chorizo quickly then remove from pan when edges have blackened. Chuck in onion and pepper and fry on pretty high heat until softening and coloured slightly (5 mins or so) then add tomatoes and garlic and cook for a minute. Return chorizo to pan and season. Put mixture in oven proof dish, make 4 depressions and crack eggs into them. Season. Grate cheese over top. Cook at 180/Gas 4 for 15-20 mins depending how you like your eggs.

3 minute microwave chocolate cake in a cup!

4 tbsp sr flour
2 tbsp sugar
2 tbsp cocoa straight into a mug, then add
1 EGG
and mix really well with a fork. Then add
3 tbsp veg oil
3 tbsp milk (soya or cow)
mix and put in microwave on full for 3 minutes.
eat standing up in kitchen, tell any smallfry who asks its just mums cupasoup ;)

cake is obviously the best way to eat eggs. failing that I like boiled eggs in fish pie, or in salad nicoise.

I have had great success with a pork pie containing boiled eggs - a bit of a backward scotch egg. You have to mark the pastry showing where you buried the eggs so that when it is cooked you can cut it right through the centre of a yolk and have people ahhhhh in wonder at your skill and mastery.

PIE FILLING
400g minced pork
4 quality sausages skinned
140g ham, chopped into small chunks
small handful of fresh sage leaves, finely chopped
1 small onion, finely chopped
1/2 tsp sea salt
1/2 tsp freshly ground pepper
few shakes of Worcestershire sauce

5 boiled eggs

HOT WATER PASTRY
120g lard
450g plain flour
1/2 tsp sea salt
4 tbsp milk
150ml water
1 egg yolk, beaten for wash

mix filling together. Make hot water pastry. line a greased pie tin with pastry. put in half your filling. bury your eggs. put in other half of the filling. pop your lid on not forgetting to mark on it where the centre of the eggs lie, give it a good egg wash. bake at 200 for 30mins then 160 for 90mins.

Cool completely. Take to a picnic where you want to show off. Serve with many chutneys.

Fussy ds likes 'omelette' - beat 2 or 3 eggs with a squirt of tomato puree. Pour into frying pan, fold in half when it gets brown round the edge. Cut into strips.

Attempts to sneak more veg into said omelet have failed to date.
