I mix 30g parmesan (healthy a) with 1 egg and a TSP of light Philadelphia. Cook pasta and drain. Fry bacon medallions. Remove from heat, add pasta a parmesan sauce and stir till coated.

If using healthy a for parmesan it's very low syn -only need to syn the small amount of Philly.

It's a bit heavier than a traditional carbonara but a quick mid week meal.

The classic way of making carbonara is free if you use both HEAs for the Parmesan/pecorino and substitute pancetta for bacon. You just mix the beaten egg abd cheese into the hot pasta and let it mingle

Make sure to include a large salad as there's no speed on the carbonara made classically

The pinch of nom one is excellent. gammon is much tastier and a nicer texture than bacon medallions
