Basically wanting to get my head back into slimming world. My boyfriend is a chef and works ridiculous hours so I'm usually having to wait up for him to have my tea with him. We have a 5 month old daughter and I've got her into a basic routine with sleeping and weaning etc. I no longer want to be eating so late with him but I just need SW friendly dinner ideas that are quite simple, easy to make, basic ingredients sort of meals for me to have. I know I'll have to make separate dinners for my boyfriend but with him being a chef it makes it difficult to keep myself motivated so need to do this on my own.

If I'm cooking just for me and not DH or DC's I have salmon and salad maybe with roasted veg, or chicken wrapped in Parma ham stuffed with Boursin. Much easier to cook sw just for me! Linda McCartney's sausages beans and potato wedges. Microwave rice with chopped up chicken, courgette, peppers, broccoli etc.

Cajun chicken pasta, cheeseburger pasta, quick Veg Risotto with some meat added, chicken jambalaya. Steak/chicken/pork loins with rice/wedges/noodles and veggies.

Caribbean Pepperpot Stew, you could batch cook and freeze the left overs.

No need to make separate dinners for your boyfriend: just make something that can be easily reheated, eg chillis, curries, pasta sauces.
