2.5 year old child - Not sleeping!!

My daughter has always been a pretty naff sleeper, however past 4-5 weeks have been ridiculous.
She's 2.5 years old.
At the moment she is taking around 3 hours to get down to bed. Dicking about, saying she isnt tired, getting up for a wee, chatting. Eventually crashes but its usually 9/9.30pm by this time.
I've tried lots of things, the norms, reducing screen time, strict routine/timings, talking, not talking, banana before bed, magnesium.. about to waste more money on sleep stickers 🫣
She is also up in the night demanding a drink. I currently give very weak squash (I know its not ideal) but when attempting water to get her to break the cycle she royally kicks off. Full blown tantrum, throwing the bottle etc - also not ideal in the middle of the night, potentially multiple times.
I'm at a loss. So open to any experience/advice you's can throw at me! 😇

What time does she get up in the morning? Does she have a nap? I think you do just have to ride the tantrums out about the water. We leave a bottle with our 2yo and 4yo so they can just help themselves. Maybe on a weekend when you can stomach a couple of terrible nights before she realises the squash isn't going to make a reappearance?

What time does she wake up? Is she napping?

Air Up bottle could be a solution to the overnight squash standoff.
