2 and half year old problems

Is this normal behaviour I’m loosing my mind šŸ¤¦šŸ¼ā€ā™€ļø.
My LG is 2 years 9 month old she has always fight her nap and bed time since she was a baby once she’s asleep at night she’ll sleep for a good 12 hours it’s just getting her to sleep that’s so draining and hard.
I don’t know if she’s going though sometime atm but this past week hit and miss has been difficult, todays been the worst of all! She’s been dropping her last nap some days she’ll have it some days I’ll put her in bed and she just won’t sleep.
Today started of she was in a lovely mood when she woke up then I gave her porridge which she asked for the tiniest bit was left then she chucked the spoon on the floor I said have you finish then she said yes so I took the bowl away put it in the dishwasher got her out the high chair then she’s screaming hitting my dishwasher screaming porridge so I got to bowl out showed her it was pretty much all gone but still crying until I got a spoon and showed her there was only a tiny bit left.
Then we walked into town which was fine on way home she was leaning out of pram I told her not to do that cause she might tip it over and it’s really icy on the ground she didn’t do I as I asked so I strapped her in then she was screaming cause she didn’t want to be strapped in so I undid it and then she did want to be strapped in this went on so I just left her till we got home (couldn’t keep stopping very 2 seconds it was freezing).
Tea time came she was fine eating then after I said shower then bed or play then shower in the morning. She said play. Come to 6:45 I said common time for bed she had a full on melt down for about 45 minutes of screaming shower, then when I got her off the subject of shower it was brush my teeth then don’t brush my teeth. She was just constantly fighting her bed time, finally asleep after 1 hour. I am worn out, I don’t know if she’s started acting like this because she’s dropped her nap or she’s going through something. Anyone going through the same thing?

How much activity does she do? My 2 year old needs to be exercised like a dog. Big run around in morning or she won't nap and something v active in afternoon. Mine doesn't tolerate being pushed in pushchair unless tired from exercise
