Poivre blanc and icepeak both do short length women’s pants, not sure about jacket though.

Kids!

5'0 size 8-10. Kids base layers from Amazon. Got my merino ones for an absolute steal as they're technically kids. They're garish colours but they were cheap!

I didn't bother buying petite salopettes. They're a bit long when I'm barefoot but absolutely fine when my boots are on. Generally if you're I salopettes, you're in boots.
Though I did buy DS1 some Boden ones on ebay that are marked as 152cm and they fit me.

I just have a regular jacket. No real difference on fit as far as I can see.
Ebay and FB marketplace are good for preloved. Decathalon is a great for low cost new.

I am 5ft and size 8 with short legs.
I have a pair of dare2be salopettes that are absolutely fine. With ski boots on it won't make much difference!
Base layers - kids age 14 - 15.

I buy kids, it's VAT free so is noticeably cheaper. I've generally bought at the end of the season when stuff is discounted, but I've been happy with these CPM ones CPM Salopette WP 5000 3W15994 Salopette amzn.eu/d/he97Dl7 .
