I'm going for the first time next week.

What is it like?

What is there much to do when not skiing?

Awesome!

The ski areas are fairly spread out, you may need to get a bus now & then. Very high up at Kleine Matterhorn (3,500m if memory serves) so you should have fab snow. Amazing views of the Matterhorn. It is in Switz so will be expensive, you may want to consider lunching over the Italian side in Cervinia where you have some fabulous Italian food up the mountain. Don't get stuck on the Cervinia side by missing the last lift over, very long expensive taxi to get back go Zermatt! Sure there are plenty of shops, cafes, restaurants in the car-free town but I'm normally busy on the mountain. Enjoy!
