SMS was too poorly togo out to buy lemons and I couldn't get a delivery slot for tesco online

then I saw deadline extended and I could have done one for macmillan coffee morning but it was too late

Really? It looks fine to me. I don't think the colour has changed. You might want to refresh the page if it's still looking a bit bluer than usual.

Alright then SMS, I believe you, I suppose being dangerously ill is just about a good enough lamoexcuse perfectly justifiable reason not to make a cake and take it on an outing.

I think the MNWI may shut up shop for the rest of the season and come back for a final, majestic flourish at Christmas when we can all have a butchers at each others Christmas cakes.

Have you seen the thread. MrsJC's epic adventure up a scary mountain track with her LDC and DC is hilarious (complete devotion to the cause).

I havn't read it properly but I will go see...I have to say that I was in no fit state to drive (hence no trip to Tescos; have been eating chicken nuggets and fish fingers for nearly 2 weeks ) so taking a cake I baked anywhere would have been a scarey experience.

I don't like Christmas cake, but could do something yule loggy or gateauxy

Okay..... to make it as a round cake do 6,6,6 and 3.

6 flour, sugar, butter, 3 eggs. Use 2 tsp baking powder and 4 tbls milk.

Divide the mix between the two sandwich tins. Then I would make a butter icing for the middle (just butter and icing sugar.... maybe add some lemon juice), then do the topping as before.

Hope that helps.

Recipe... okay

12oz flour
9 oz sugar
9 oz butter/marg
4 eggs
3 tsp baking powder
6 tbsp milk
zest of 2 lemons

Pop it all in a bowl and whisk. Pop into large roasting tin or large square baking tin (which you should line with baking paper, but I don't always).

Cook on 180 or Gas 4/5 (I think) for 30-40 mins. To test if it's cooked pop a knife into it. If it comes out clean it's cooked. You can also press the top and see if it springs back up.

Prick it with holes. Warm the juice of the 2 lemons in the microwave for about 20secs. Spoon 3-4 tablespoons of lemon juice over the cake. Mix the rest with icing sugar (as thick as you like). Voila!
