Sorry to be dim but I can't figure it out!
How do I select a thread to be one I'm watching?

Under the blue line above your post where it says "Topics>>Site Stuff", there are options: Start, Watch, Flip, Hide, Refresh. Just above "Add a message"

Or below the message box is a tick box, "Watch the thread"

Hi melonribena - as Jux has said, you can add threads to your watch list by either clicking "watch this thread" at the top of the page, or ticking the "watch this thread" tick box when you post.
