what/where are Bookmarks and can you use them on the mobile site?

I have seen them mentioned but can't see any option for it.

Bookmarks are on the bottom right corner of each post. It's for you to mark your place in a thread so when your return to it, you should jump straight to the bookmarked post.
It's usually used to mark the last post so you can continue reading from where you left off last time.

And yeah, you can use them on Mobile site too.
On computer screen you have to hover over the bottom corner to see the option, on mobile I think it's a clear button.

I don't know about the mobile site, but on the desktop site you have to go into Customise, which is up there ^^

Once you've clicked on Customise it will take you to a page of your customising options, including activating Bookmarks.

I imagine it must work a similar way for the mobile site.

Yes, you have to turn them on in your Customize options.
