What am I doing wrong? I could scream -it just wont make fine breadcrumbs the toast just stays lumpy and soggy and therefore doesnt coat anything!

So trsgic that this bothers me but I make a lot of homemade chicken nuggets and its a pain!

perhaps your bread is too fresh and moist. It needs to be a bit stale to make good brreadcrumbs.

I use bread not toast.

Which attachment are you using? I use the knife blade.

Not had any problems, what model do you use?

I do toast it and let it cool a bit before whizzing-its a kenwood Ithink and I use the knife blade too-its obv just me!

Should I toast the bread even crisper do you think?

Recipe said to toast so I did but ended up having to toast nearly double the amount stated to just get enough to even partially coat the bloody things!

Cant believe my life has come to this

Tell me about it.

Its a job I hate but I use loads of them.

So every few months I buy a loaf dedicated to breadcrumbes, leave it a few days (agree with above poster re freshness) then food process the whole lot in one go. Freeze them in small portions in freezer bags. I use them from frozen

Simples! But then my food processor does work!
