I also have fallen arches but have custom insoles I can use with anything.

Have seen these at Fitflop but any other recommendations welcome please.

Grisport Lady Glide. Definitely don’t need breaking in. And are good for wider feet too.

Not too heavy and broke in quickly which is good for me as have issues with my feet. Bought a reproofer spray and gave them an extra layer of proofing (my old waterproof boots were the exact opposite so think I went over board 😅) had no issues, no rubbed heels or soggy feet yet.
